I had a conversation last week with a very dear relative of mine who is on the cusp of diabetes. She’s very overweight and lives a somewhat sedentary lifestyle. Being Hawaiian, a main staple of their meals is white rice. As usual when she asks for my help, I encourage her to put away the rice cooker…to start. It’s very tough to turn your back on a cultural dish that is ingrained in your every day. But it’s also necessary.
