Carnitas is easy & exceptionally good. The best way to get it is at (I am not making this up) Alfonso’s, a little shop in a gas station in Raton, NM. What you want is the carnitas burrito — huge amount of perfectly cooked carnitas, guacamole, pico de gallo wrapped with just enough tortilla to hold it together (10″ long and 3.5″ diameter).
So let’s make some:
Essential
1. Roast pork – shoulder/butt (nothing too lean). 200F x overnight (or at 350-375F until done if you’ve decided on this late).
2. Chop and fry pork. Be brave and get it nicely brown and crispy. Weighting with bacon press helps. Season as desired (salt, garlic, chili, cumin, pepper…)
